Chicken and Bacon Stuffed Peppers

Ok, here is what I did with the peppers and the chicken and the bacon. This dish is high in protein and kept me full all night and into the next morning, but I am weird I guess. No this doesnt mean I skipped breakfast (I def did not skip breakfast). I even had a pepper leftover for lunch today.

Ingredients
  1. 1 pound ground chicken
  2. 7 strips of bacon (I used one pouch of the pre-cooked bacon)
  3. 2 green peppers
  4. 2 tablespoons of your choice of fat (bacon fat, ghee, butter)
  5. 4 garlic cloves, minced or diced
  6. ½ large yellow onion, diced
  7. 4 tablespoons hot sauce
  8. 2 teaspoon garlic powder
  9. 5-6 cups fresh spinach
  10. 6 pieces of swiss cheese (because that is what I had on hand)
  11. salt and pepper, to taste
Instructions
  1. Preheat oven to 425 degrees.
  2. Add 2 tablespoons of your preferred fat (I used vegan butter) to a large pan over medium-high heat.
  3. Add minced garlic cloves to the pan then add the diced onions.
  4. Once onions are translucent, add ground chicken and break up with a wooden spoon.
  5. While the chicken is cooking, add hot sauce, garlic powder, and salt and pepper to the meat and mix.
  6. Heat up the bacon in the microwave or in a pan or the oven (whatever your preferred method). Rip up the strips into pieces and drop into the pan with chicken mixture.
  7. When chicken is pretty much done cooking, add spinach and cover to help the spinach steam, then mix with the meat.
  8. While the chicken mixture sits, slice open the green peppers and remove the seeds. Cover a baking pan in aluminum foil and place the 4 green pepper halves on the baking pan. Take 2 pieces of swiss cheese and break each piece in half, placing half a piece of swiss in half a green pepper.
  9. Add the chicken mixture to the pepper halves.
  10. Cover each half with chicken bacon mixture with a piece of swiss cheese.
  11. Place in oven for 8-11 minutes, until the cheese browns a little.
  12. Then eat and enjoy!
